Sole with sautéed nightingales

Ingredients (for 1 person)

1 sole, a handful of nightingales and trumpets of death, bacon, garlic, oil, coarse salt and black pepper.

Preparation

  • Clean the sole and cut into supremes
  • Mixing the nightingales and the trumpets of death
  • Sauté the mushrooms with a little bacon and garlic. Reserve
  • Salt and pepper the sole and grill it, skin side first.
  • Plate by making a bed with the sautéed mushrooms and placing the sole supremes on top of the sautéed.
  • Season with a little oil and coarse salt.
  • Serve
